Chicken and Sausage Gumbo EASY instructions

  1. prep all veggies and pull apart chicken and cut sausage into pieces. put meat and veggies in separate bowls.
  2. heat up small stock pot with oil. add flour and cook stirring occasionally til rue turns brown.
  3. add vegetables and cook 5 min or til tender. you can use a variety of vegetables but these are my fave..
  4. now add the water a little bit at first. then the rest..
  5. add meat ( side note: if you don't want to skim fat off top later I would cook the sausage down in a skillet for a few minutes and drain the fat. then add to pot).
  6. add spices and seasonings. these can vary to personal taste. some add cumin.
  7. bring to boil then simmer hour at least 1 hour. if using raw chicken.. cook alot longer and take our chicken seasoning.
  8. serve over rice. if out of rice egg noodles!.
