Ingredients of Quinoa "Fried" Rice

  1. It's 3/4 cup of uncooked quinoa.
  2. Prepare 1 1/2 cup of water.
  3. Prepare 2 tsp of olive oil.
  4. You need 1/2 cup of onion, diced.
  5. You need 3 of eggs.
  6. Prepare 10 oz of organic chicken.
  7. It's 2 clove of garlic, minced.
  8. You need 5 tbsp of soy sauce.
  9. You need 1 tbsp of teriyaki sauce.
  10. You need 1 cup of frozen peas and carrots.
  11. Prepare 1 of salt and pepper, to taste.
  12. It's 2 tbsp of olive oil.

Fact: fried rice used to be one of my guiltiest pleasures. It's one of those dishes that I always use to order whenever we got Chinese takeout (alongside a little lo mein, of course) and still crave pretty much all the time. This Quinoa Fried "Rice" is a healthy take on everyone's favorite Chinese takeout! It's easy to prepare, and every bit as delicious as the original!

Quinoa "Fried" Rice step by step

  1. In a medium skillet, add quinoa, olive oil and water. bring to a boil and reduce heat. Cover and let simmer for about 15 minutes. Remove from heat and stir. I let it sit for a few minutes before placing in the fridge to cool..
  2. Add olive oil to a seperate pan. Heat and add onions. Immediately add eggs and stir..
  3. Add garlic and chicken. ***I cheated and used a can of organic chicken, due to lack of planning ahead, and it still came out absolutely delicious. I do recommend using fresh chicken, but sometimes it's nice to have an easy substitute!.
  4. Once onions (and meat, if applicable) are cooked, add soy sauce, teriyaki sauce, and peas and carrots. Stir and let simmer for about 2 more minutes..
  5. When cooking fried rice with actual rice, it's best to use rice that has been refrigerated overnight. The great thing about quinoa is that I only left it in the fridge for about 30 minutes, and that was all it needed!.
  6. So now... add that quinoa to the rest of the ingredients. I pressed down on the mixture with a spatula to add a little last-minute crispiness..
  7. Add salt and pepper, to taste. I barely used any salt, the soy sauce is salty enough..
  8. Remove from heat, and try not to eat everything at once, because it is addicting!!.
